Irresistible & Thick, Family Favourite Shortbread

This shortbread recipe is an easy variation that is a perfect balance between soft and crumbly. I love them, my family loves them, and I’m positive you and yours will as well!

The original recipe came from my aunt years ago. Where she got it from, I don’t know. Well, I have been baking them since then and every time I make them they are gone fast. Other than the not-too-soft and not-too-crumbly bite that this shortbread provides, I love the elegant way they look. (You can, obviously, make them in any shape you desire.)

Just 4 Ingredients

Just like the original and traditional Scottish method, these shortbread cookies need only 4 ingredients. The jam seen in mine is both optional and homemade! I have yet to post the recipe for my grandmother’s really easy cherry jam recipe. Anyways, here are the ingredients:

-½ cup cornstarch

-½ sugar (I use granulated sugar but you can use powdered (icing) sugar too)

-1 cup all-purpose flour

-¾ cup butter (it needs to be room temperature!)

Directions

Sift the cornstarch, sugar and flour together. Next, smooth in butter.

Roll into 1 inch balls. Place on baking sheets and press down slightly, making sure cookies are 1 ½ inch apart.

Bake for 300°F for 15-20 minutes, depending on your oven. Recipe yields 24 cookies.
